The list writes itself once the plan exists. ■ PREP — 30 minutes. Two or three jobs from the Prep Menu. Not everything. ■ BREATHE — 5 minutes. Wipe the counter. Kettle on. Sit down. The hour is over.
And when the hour is up, you stop. Even mid-task. Even with the carrots half done.
Because you will have planned the week, and shopped for it, and prepped something — and that is a complete success. An hour you'll repeat beats an afternoon you won't.

Make the masala on Sunday and a weeknight Rajma takes twenty minutes. ★ CALDO VERDE (Portugal) — potato and kale soup with smoky sausage. Three ingredients. Shred the greens to threads.
