About this planner

THE KITCHEN LEDGER — it won't tell you to spend less. It will tell you what you spend.

You know what your big shop comes to. Roughly. Most people do.

What you almost certainly do not know is the total — the shop, plus the four small trips you made because you'd forgotten the milk, plus the lunches, plus the Friday takeaway you never count because it's Friday, plus the coriander that liquefied in the drawer and went in the bin.

Nobody knows that number.

And the reason nobody knows it is that nobody writes it down.

A BUDGET IS A PROMISE. A LEDGER IS A RECORD.

That distinction is the whole book. A budget is something you promise yourself in advance, and most of them are quietly broken by the second week.

A ledger can't be broken, because it isn't a promise. It's just the truth, written down in four columns.

★ THE FOUR COLUMNS — and you have never counted two of them

1 · THE SHOP — the big one. Everybody budgets this, and it's usually about right.

2 · THE TOP-UPS — the "just popping in for milk" trips. You go in for one thing and come out with six. This is where the money goes — and almost nobody is counting.

3 · OUT & TAKEAWAY — lunches, coffees, and the Friday takeaway you don't count because it's Friday. It's still food. It still costs. In it goes.

4 · THE WASTE — what you threw away. Costed, not weighed.

Columns two and four are the point of this book. Column one is the number you already half-know. It's the other three, added up honestly at the end of a year, that produce the moment people describe simply as "oh."

★ THE SEALED GUESS

Before you begin, on page 7, you write down what you think a year of food costs your household.

Guess. Don't work it out — that would defeat the object entirely. The value of that page is that it captures what you believe today, before you have any evidence at all.

Then you close it. And you don't look at it again for a year.

On page 56 — The Reconciliation — you open it, and you put your guess next to the real number.

Most people are out by somewhere between a quarter and a half. Almost always low.

And here's why, and it isn't a moral failing: we remember events, and we do not remember habits. You remember the big shop, because it's an event — a trolley, a queue, a large number at the end. You don't remember the eleven small trips, because each one felt like nothing at all.

And nothing, multiplied by eleven, multiplied by twelve months, is a very great deal of money.

That gap is not a character flaw. It's arithmetic that nobody was doing. And now somebody is.

★ NO LECTURE. NO DIET.

Page 59 has two columns, and the second matters as much as the first:

What I'll change — and — what I'm keeping, and I don't care what it costs.

The Friday takeaway may be the best money you spend all week. The good coffee may be the thing that makes the morning survivable.

A ledger that only ever leads to cutting things is just a diet wearing a waistcoat, and it will end the same way.

Know the number. Then choose on purpose. That is the entire ambition of this book.

★ WORKS IN ANY CURRENCY

No currency symbol is printed anywhere in these 76 pages. You set yours once, on page 8, and every column after that is simply a column. Pounds, dollars, euros, rand, rupees, naira — it doesn't care.

WHAT'S INSIDE — 76 hyperlinked pages

PART ONE · OPENING THE BOOKS — The Four Columns · The Sealed Guess · Currency & Conventions · The Standing Costs (the daily coffee — be honest, and multiply) · The Price Book × 6 (what things actually cost, so you know a bargain when you see one, and know when something has quietly got expensive)

PART TWO · THE MONTHS — 12 months × 3 pages: the Shop ledger, the Top-Ups & Out ledger, and the Month Close with a running year-to-date

PART THREE · THE RECKONING — The Year at a Glance · The Reconciliation · The Waste, Costed · The Top-Up Problem · What I'll Change, and What I Won't

PART FOUR · THE KITCHEN — 10 recipe cards, and three dishes that are cheap because of what they are, not because you skimped: ★ MISIR WOT (Ethiopia) — the pulse. The cheapest protein humans have ever farmed, and the finest thing to do with it. One jar of berbere is the entire investment. ★ BORSCHT (Ukraine) — the vegetable. Five of the cheapest things in the shop, all of which keep for weeks, becoming one of the great soups of the world. Better on day three. ★ ROPA VIEJA (Cuba) — the cheap cut, cooked longest. The toughest beef in the shop is tough because it's muscle that worked — which is precisely why it has more flavour than the expensive one. All it asks for is time, and time is free.

Metric and imperial throughout.
